Neither one of us are too into creating new years resolutions. But, this year, we have set a few goals for ourselves. After a lot of discussion, research, and talks with some friends of our who do the same- we have choses to tackle a new way of eating- a plants based diet. I know, this might sound odd. But, while Anthony was away for training this fall, I stopped eating meat, and most dairy. Mostly because it wasn't fun to cook a piece of meat for just one person. I got creative with how to cook simple healthy meals. And, found that I felt great! I lost a lot of weight, and found that I had an increase in energy. Luckily, I have a hubby who's interested in feeling the same way. SO- with the new year approaching, and after severely falling off the band-wagon with the many Christmas parties, we've decided to charge head on into a plants based diet.
I was given a fantastic resource, the "Forks Over Knives Cookbook" for Christmas- highly recommend it to any of you looking to make a similar transition, or who are just looking for way to incorporate more vegetables and healthy grains into your daily diet. I also have really enjoyed following this blog- vedgedout.com, for lots of inspiration and fun recipes!
Along with making a resolution to eat healthier for our bodies, we've also decided to tackle running our first half-marathon. Neither one of us enjoy running, but, can't wait for the sense of accomplishment we'll feel knowing we actually ran a half- marathon! We've been inspired by several friends who've ran a few half-marathons in the past, and are thankful that several of those friends are planning to run the Chicago Half-Marathon with us, on September 8, 2013!
